Strawberry Cheesecake
Strawberries are coming into season now in many parts of the United States, so you should be finding them readily available at your local grocery stores soon if not already.
Strawberry Cheesecake
1 *prepared 9-inch graham cracker crust
2/3-cup evaporated milk
1 package 8 ounce cream cheese (softened)
1 egg
1/2 cup granulated sugar
2 teaspoons flour
1 teaspoon lemon peel (optional)
2 cups strawberries
3 tablespoons strawberry jam (warm)
Crust recipe
1 1/4 Cups finely crushed *graham crackers
(*you may substitute left over sugar cookies for graham crackers if you like)
1/4 cup granulated sugar
5 tablespoons melted butter or margarine
mix together well and press into pie pan, bake at 400 degrees for 5-7 minutes.
Preheat over to 350. Blend milk, cheese, egg, sugar, flour and lemon peel until smooth, pour into crust. Bake 35 to 40 minutes or until center sets up. Cool at least two hours. Before serving place strawberries on top and drizzle warm jam over top.
