Parmesen Chicken
One of our readers sent me this recipe. It looks yummy.
Parmesan Chicken
4 chicken breast (save the rest of the bird for a nice Chicken salad)
1/4 cup fresh parsley from my garden otherwise 1 teaspoon dried
2/3 cup shredded parmesan cheese (not the stuff in the jar that you shake on your spaghetti)
1/2t salt and pepper
1t thyme
1t basil
1/2 cup butter
1 tablespoon minced garlic
1 recipe of homemade spaghetti sauce, *recipe below(or 1 can Herb and Garlic spaghetti sauce)
melt butter and garlic together, in separate dish
shredded cheese,thyme,basil,salt, pepper parsley
Roll each breast in the butter garlic mix then into the dry mix of things. Lay in the oiled 9x13 glass baking dish pour the can of spaghetti sauce over it. bake @350* for 1 hour(till done)
During the last 20 min of cooking,lay cooked zucchini coins on top of chicken, mix a bit of oil with the same spices used above on top chicken with spice mixture pressing in a bit and top off with extra cheese at serving
Believe me it is easier than this sounds and it was phenomenal.....
*Spaghetti Sauce*
Two cans tomato paste
2 cups diced tomatoes
One chopped onion
Garlic salt, to taste
Basil, to taste
Oregano, to taste
Two teaspoons sugar (optional)
mix all ingredients in a saucepan, stir well and simmer five minutes.
