New Chicken Soup


I love to experiment with recipes making them my own. Here is my latest, you can tell I love chicken. I don't know if it should be called soup or a casserole. But my family came back for seconds. Chicken Vegetable and Noodle soup/Casserole 4 cups of raw chicken cut in bite sized chunks salt and pepper to taste 1/4 teaspoon of Garlic powder(some call this a pinch, more if you like garlic) 1 cup each of the following vegetables, fresh, canned or frozen cut green beans corn peas celery diced potatoes lima beans(cooked) okra, cut (oprional) onion finely diced (optional) 2 cups chicken broth, canned or homemade, or bullion 2 cups uncooked noodles, dry, homemede or frozen Brown chicken until all pink is gone, add potatoes, celery,and onion, (or any other fresh vegetables used)cook until tender. Add remaining vegetables, broth and noodles. Cover and cook until noodles are done. Stirring occasionally. This will get thick, and if all liquid is asorbed before the noodles are done, add more broth. This makes a big batch and is done in under 20 minutes, what a quick meal for a hungry crew. Got a really big group, add another cup of noodles and a little more broth. Substitute quick cooking rice for the noodles for a bit different taste. Note, To keep peas from getting over done wait to add them until the last few minutes of cooking. I served this with garlic bread,and cottage cheese topped with Pineapple chunks as a side.
