The History of Pecans The history of pecans can be traced back to the 16th century. The only major tree nut that grows naturally in North America, the pecan is considered one of the most valuable North American nut species. The name "pecan" is a Native American word of Algonquin origin that was used to describe "all nuts requiring a stone to crack." Family Favorite Pecan Recipes Apricot N' Pecan Coffeecake 2 cups flour 2 cups sugar 3-teaspoon baking powder 1-teaspoon salt 2-teaspoons cinnamon 3 eggs 1-cup corn oil 2 6-ounce jars apricot baby food 2-teaspoons vanilla 1 1/2 cup pecans, chopped Combine all ingredients. Mix well. Grease bundt pan. Sprinkle with heavy coat of granulated sugar. Pour in cake batter. Bake at 300 degrees about 1 hour. -------------------------------------------------------------------------------- Cloud Nine Cookies 1-1/2 lbs. white almond bark 1-cup chunky peanut butter 4-cups mini marshmallows 2-cups Rice Krispies 1-cup chopped pecans In a microwave, melt bark. Stir in peanut butter. Add cereal, pecans and marshmallows, Stirring well to coat thoroughly. Drop by teaspoonfuls onto wax paper. Remove when cool.
