Amazing Breakfast Skillet


Have you ever had just a little time and a big group to feed? Not sure you have enough eggs to feed the crowd, or short on bread for toast. Here is a quick breakfast skillett that can feed 8 -10 people.

Quick Breakfast Skillet

About 15 minutes prep time, minimun clean-up needed, 1 large and 1 medium skillet are needed.

1 pound breakfast sausage scrambled (if link sausage is used, cut it up into small pieces after cooking)

1 cup diced ham, cooked  bacon or a combo

2 cup julliene sliced sweet peppers, red, yellow, green any combination

2 cups julliene sliced onion

sliced mushrooms fresh or canned (optional)

3-4 mediun potatoes coarsely diced well scrubbed with skins left on.

6-8 eggs

salt and pepper to taste

shredded cheese and salsa for topping (if desired)

cooking directions

*Brown Sausage (drain off excessive grease) add ham, bacon or other meat

*fry potatoes, onions, and peppers until potatoes are cooked through, add mushrooms and heat through, add this to the meat mixture.

* break eggs in a bowl and whip until frothy, add a small amount of oil to the skillett you used for sooking potatoes and scramble eggs well before adding to the rest of the mixture.

* stir well and you are ready to eat.

If the group is larger add more eggs or potatoes if short on meat. Left over roast, chops or steak sliced thin is another option to add.

This can be made into breakfast burritos using a warm tortillia and adding cheese and salsa, or eaten as a casserole with toast. Serve family style and let the diners decide .

This versatile skillet is also great served at a brunch with fresh vegs, fruit or cheese cubes and assorted jellies on the side

left overs keep well and are just as good the next day.
